Ingredients For Mutton
1 Kg Mutton |
4 Fine chopped onions 200 Gram Curd |
2 Tablespoon green chilly paste |
2 Tablespoon coriander powder |
1 Tablespoon of kashmiri red chili powder |
½ Tablespoon turmeric powder |
1 Tablespoon salt (According to your taste) |
4 Spoon oil |
2 round chopped tomatoes |
14-15 Pieces a black pepper |
8-9 Green Cardamoms |
½ Nutmeg |
1 Tablespoon cumin seed |
1 Mace (Javitri) |
5-6 Cloves |
Coriander leaves for garnish |
1 Tablespoon ginger garlic paste |
Ingredients For Rice
½ Kg Basmati rice |
1 Ltr water |
2 Cinnamon 1 inch piece |
3 Black Cardamoms |
1 Spoon of oil or Ghee |
1 Tablespoon salt (According to your taste) |
2 Bay leaf |
5 Cloves |
5 Pieces of a black pepper |
2 Star anise (Chakra Phool) |
1 Tablespoon cumin seed |
½ Nutmeg |
2 Black cardamom |
Rest of the Ingredients
2 Tablespoon Ghee or Refined Oil (If ghee is not available) |

Method of making Mutton Biryani
Step 1: Prepare Roasted Onions
Finely chop two onions. Separate the onion pieces. After this, heat the oil in a pan or kadhai. Add onions and fry them.
Fry the onions light-handedly. And keep stirring. After the onions are fried, take them out. Place on tissue paper, if available otherwise put on a plate.
Step 2: Keep mutton for marination
First Wash the mutton pieces thoroughly with fresh water and dry them after draining all the water.
Take a big bowl and put all the ingredients given below in the big bowl and mix it well with mutton pieces.
- 200 Gram Curd,
- ¾ part roasted onions which are prepared in step 1 (¼ part keep aside for final use)
- 2 Tablespoon green chilly paste
- 2 Tablespoon coriander powder
- 1 Tablespoon Kashmiri red chili powder
- ½ Tablespoon turmeric powder
- 1 Tablespoon salt (According to your taste)
- 1 Tablespoon ginger garlic paste
Once it is mixed well (No Need for marination, it’s optional).
Step 3: Add the mutton to the cooker and cook
Take oil in a cooker which was left at the time of roasting onions and if oil is less then take 1 spoon more and heat it.
When the oil becomes hot, put the mutton mixture in the cooker, fry it for about 10 minutes, and keep stirring the mixture continuously.
Then add 1 glass of water, close the lid of the cooker and let it cook for 7-8 whistles so that the meat gets cooked up to 80%.
Till the cooker takes 7-8 whistles, in the meantime make powder of the following ingredients
- 14-15 Pieces of black pepper
- 8-9 Green Cardamoms
- ½ Nutmeg
- 1 Tablespoon cumin seed
- 1 Mace (Javitri)
- 5-6 Cloves
When 7-8 whistles are completed, open the lid of the cooker and add the following ingredients
- 2 round chopped tomatoes
- Add ¾ part of the powder prepared above (¼ part powder keep aside for final use)
- Some Coriander leaves
After adding all this, stir it well and after roasting for about 2 minutes, our mutton will be ready and we will keep it on the side.
Step 4: Prepare the biryani rice
Soak basmati rice in water for 20 minutes and leave it. Then clean it thoroughly and remove the water from it.
Take about 1 liter of water in a vessel, and add the following ingredients.
- 2 Cinnamon 1 inch piece
- 3 Black Cardamoms
- 1 Spoon of oil or Ghee
- 1 Tablespoon salt (According to your taste)
- 2 Bay leaf
- 5 Cloves
- 5 Pieces of black pepper
- 2 Star anise (Chakra Phool)
- 1 Tablespoon cumin seed
- ½ Nutmeg
- 2 Black cardamom
And when the water becomes hot, then add the rice also.
And keep checking the rice in between, whether the rice is cooked or not, and do not cook the rice more than 80%.
it should be a little hard. When the rice is cooked up to 80%, then drain the remaining water from it.
Step 5: Prepare the Kesar milk
Take lukewarm milk in a cup (you can use water too if milk is not available). Add saffron, rose water, kewda, and 2 pinches of food color. Mix it well and keep it aside for 15 minutes.
Step 6: Finally make a biryani layer for dum style
Take a pot, Add two tablespoons of ghee, and heat it. Melt the ghee by reducing the flame. Apply ghee well on the bottom and sides of the pot.
Turn off the flame. Then put the first layer of rice in this pot. Then add a little Kesar milk mixture (Which was made earlier), fried onions, coriander leaves,
and the spice powder that we had kept in balance earlier, and add a little ghee. Then add the mutton pieces on top. Repeat the same action.
Repeat this process till the rice, mutton, and ingredients are finished. Keep in mind that the bottom and top layers should be of rice.
After this, add mint and the juice of half a lemon on top.
Cover the pot with foil paper if foil paper is available or else apply the dough on the edge of the pot. After that, cover the pot with a lid.
After that, put the biryani on the gas and cook it for 1-2 minutes on a high flame, then remove the biryani from the gas.
And then put the Tawa (Round Flat Pan) on the gas and let it heat up, after it becomes hot, put the biryani pot on it and let it cook on low flame for 20-25 minutes in dum style.
Keep in mind, you need to have a thick base for the pan or Tawa, otherwise, the rice will burn. Or you can also keep the pan on top of the pan.
Switch off the flame after 20-25 minutes. Leave the biryani as it is for about 8-10 minutes.
